Let’s try to bake a tasty and healthy Italian cake Focaccia.

Flatbread can be found in the kitchen of various nations, but Italians usually add olive oil. At your discretion focaccia can be decorated with cheese, tomatoes and basil on the top. You can eat this flatbread instead of bread, or you can take it with you on a picnic or a walk (cut it lengthwise and put inside a ham and cheese). And it will be better than the purchased bread.


So, knead the dough:

500 grams of flour (sifted)

300 ml mineral water «Borjomi» (room temperature)

2 tbsp. of olive oil

2 tsp. of salt

2 tsp. of sugar

7 g of dry yeast


Mix yeast with sugar, add a little water and let it stand for 10 minutes. Pour the remaining water. «Borjomi» will allow it to be brought up to the mark. You can use common water, but the dough will not be the right consistency. Sift flour into a bowl, add yeast mass and knead a soft elastic dough. It should come off from the hands. After mixing the mass add the salt and olive oil. Oil another bowl and put down in the bowl the dough, cover with foil and leave to be brought up in a warm place, the dough should rise twice as high. Get ready, because it can take from one to two hours.

Once the dough is ready, knead it in a bowl for 3-4 minutes. Spread on the table baking paper, put down the dough on it and roll a flatbread (thickness of about 6 mm). Then cover it with a towel remain for 1 hour.

After that do little hollows in focaccia using your fingers and grease 2 — 3 tbsp of olive oil of good quality. No oil to spare!

Then we have various variants.

For example, sprinkle with a large sea salt and rosemary.

Or just put into each hollow a slice of tomato, sprinkle with the basil and put olives. Sprinkle on top a little olive oil.

Or sprinkle with dry thyme, black pepper, sprinkle with grated Parmesan cheese and garlic chopped into fine strips, sprinkle the top with olive oil.

Preheat the oven to 220 degrees.

Put focaccia with paper on a baking sheet and leave it for 20-25 minutes. You can chek up the readiness by a beautiful golden color of the flatbread
