Some countries are lucky: they have places, where the earth holds the treasures, for example, minerals or freshwater. Water heritage of Georgia is about 2 thousand sources of fresh water and 22 mineral water springs. Successful, famous is mineral water Borjomi, which takes the first place in the export summaries of Georgia. This water is unique in all aspects: it is not only the source with truly healing water, but it is also the town, which keeps the memory of the times and people, who began to spread Borjomi around the world. It is also the National Park Borjomi-Kharagauli. Let’s start with the thing that all this wealth is located in southern Georgia in the administrative region (“mhare” in Georgian) Samtskhe- Javakheti with the capital Akhaltsikhe. The region is boundary, it borders with Armenia and Turkey, the border with Azerbaijan is very close. It includes two historic regions: Meskheti and Javakheti. These territories were considered to be the gate from the Caucasus to the Middle East, and it was a desperate struggle for them. The participants of the struggle were not only Russia, Iran, Turkey, but also France and England. Georgian militia fought on Russia’s side. As a result of Russia’s victory in the war with Turkey (1828-1829), these territories were reunited with Georgia. In modern conditions the strategic importance of this region is due to the presence of the Baku-Tbilisi-Ceyhan oil pipeline and Baku-Erzurum (South Caucasian pipeline). The territory is relatively small: 5 cities, 6 towns, 268 villages divided into 6 districts. Akhalkalaki, Ninotsminda, Akhaltsikhe and Tsalka Districts have a large number of Armenians. The region is economically weak; it takes only the 8th place among 11 Georgian regions. There is no industry, except for a garment factory in Ninotsminda. Agriculture is the foundation of economic activity of inhabitants. For travellers the nature is indescribable beautiful and the land is ecological. By the way, in 2010 there might have been the reconstruction of the roads, which could have helped the development. In addition, Georgia has announced Borjomi and Bakuriani to be the contenders for the Winter Olympics in 2014! Can you imagine how things would have changed, if Borjomi was approved! Maybe there would be another economic miracle! As you have understand, the region is complicated, its development prospects are enormous and multi-choice, so I hope that we will hear good news about it!

Soup, which is similar to our rassolnik, but it is completely different!
Boil chicken broth with onion, carrot cut in half. Chicken separate from the bones and cut into small cubes. Pour pearl barley in boiling water and cook until soft. Pour out pearl broth (though I add with broth) and pearl barley cook in chicken broth until tender. Add salt to soup, put diced chicken into a soup and let it boil. Peel the lemon, cut it into segments, remove seeds, then cut each segment into four pieces and put them in soup. Remove from heat, add the egg yolks diluted with broth, and immediately serve. At the 3 liter pot: ½ chicken, a cup of pearl barley, 1 medium onion, 1 medium carrot, ¼ celery, half a lemon, 1 egg, salt to taste.
Paste of red beans with walnuts (you can do an awesome sandwiches)
Chop cooked red beans using a meat grinder, add crushed walnuts, finely chopped roasted onion, salt, pepper, and pour broth of beans to the consistency of paste. Mix the mass and sprinkle it with parsley and cilantro. For 1 cup of red beans: 2 medium onions, half a cup of walnuts, salt, pepper, parsley and cilantro to taste.
Fish (something that few in the Georgian cuisine)
Grease the bottom of the pan with butter, put prepared trout in lines, oil the fish with butter and sprinkle with tarragon leaves. Tightly cover the pan with a lid and cook the fish on medium heat for 18 — 20 min. Serve the trout hot. Serve it with pomegranate juice.
Musaha with vegetables
Beef, beef fat ghee, rice, onion, tomato, pumpkin or cabbage, or potatoes, or eggplant (or all these products) and salt.
Cut beef into small cubes and fry. In large kettle or saucepan with a thick bottom put a layer of vegetables, then a layer of roasted meat mixed with onions and rice, then put the halves of the tomatoes and pour broth. Stew Musaha under cover on low heat for 1 -1.5 hours. Cut into pieces and fry pumpkin, potato, eggplant before the stewing. Scald the cabbage.

Very delicate cookies with a filling
Mix flour and butter, make a hole in the middle of mass, add sour cream and soda, knead the dough. Cut the prepared dough into 2 parts and put in refrigerator for 30 minutes.
