Let’s cook porridge! Part 3

Rice

Like other cereals, rice can boast of an abundance of B vitamins, vitamin E (protects from premature aging), and a large set of microelements, such as iron, zinc (saves from problems with blood vessels), magnesium (the main «enemy» of bad mood), calcium (deliver from extra visits to the dentist), potassium (improves heart function), etc. However, the amount of nutrients that your body can receive from the rice, largely depends on the method of processing the rice. Brown rice is considered to be healthy product. This type of rice differs from the usual white rice because during the processing rice grains are cleaned from inedible husk, so the shell remains. And this shell contains a lot of vitamins and minerals. If you decide to lose some weight and get rid of the toxins in your body, then you certainly should include brown rice in your diet.

Methods of rice cooking:

One of the most successful ways of cooking the rice is to use twice much water than the rice (brown rice needs more water, and the round grain rice needs less water). For 1 serving you will need a cup of rice. Pour it into the pan, pour two glasses of water and bring to a boil. Cover and cook over very low heat for 20 minutes. Do not stir. When you open the lid all water should be absorbed. Leave for a couple of minutes and serve.

Brown rice is cooked much longer than white. Before you cook this rice, wash it and pour into it cold salted water for 15 minutes. Then the water is drained, rice is washed again. Put the rice into boiling water (the amount of water should be twice bigger than the rice) and cook for 40 — 45 minutes. Brown rice does not stick and it has much more interesting and richer flavor than white rice.

You can cook rice in a frying pan. It requires a pan with a large diameter with a lid. Pour a little amount of vegetable oil on the bottom of a pan. At first fry finely chopped onions, which will give a nice flavor to the rice. Then add the rice, which does not need to be pre-washed. Mix the seeds in a frying pan until they all will be covered with oil. Thanks to the oil the rice will be crumbly.

The next step is that you will need to add boiling water to the pan. Also do not forget to add salt (about 1 teaspoon for every 150 ml of rice). You should stir only once in case to prevent the breaking of the delicate seeds (if they are destroyed, the starch will appear and the rice will get sticky. Cover with a lid, reduce heat to low and do not open the lid! If you lift the lid and let off the steam, the rice will be cooked slower and longer. But it should be cooked as quickly as possible. Cook white rice for 15 minutes and brown rice for 40 minutes. When the rice is ready remove the lid, turn the heat off and put a kitchen towel on top for 5-10 minutes. It will absorb the steam and excess moisture, so the rice will be dry and crumbly. Before the serving loosen the rice with a stick or a fork.

Rice porridge with apple and honey

1 / 2 cup of rice

1 / 2 cup of milk

2 large apples

1 tbsp. of butter

2 teaspoons of honey

Pinch of cinnamon

Boil rice in 1 cup of water.  When there will be no water, pour milk and bring to a boil. Put out the core of the apples and cut the apples into slices. Preheat the butter on a frying pan and put apples. As soon as they become softer add honey and mix. Then sprinkle with cinnamon and mix again. Put the readymade cereal in a bowl and on the top put caramelized slices of apples.

Rice with ham

1 cup of rice

50 g of butter

2 tablespoons of olive (or vegetable) oil

100 grams of ham

½ jar of canned green peas

1 egg

1 tbsp of soy sauce

Boil 1 cup of rice in 2 cups of water. Melt the butter and olive oil in a frying pan. Add boiled rice to the pan and fry. Stir while it is cooking. Dice the ham, add ham and peas to the rice. Beat 1 egg with 1 tablespoon of soy sauce, pour the mix to the rice and fry for 5 minutes.

Lazy Paella

125 grams of rice

1 package of frozen vegetables (your taste)

1 package of «Sea Cocktail» (mussels, shrimp, squid and octopus)

2 tbsp. of olive oil

Boil the rice in 250 ml of water. Heat the olive oil in a frying pan, add frozen vegetables and fry for 10 minutes. Then pour the «Sea Cocktail» and fry for 5 minutes. Add rice, mix everything and stew for 5 minutes. Eat with soy sauce.

Rice salad with shrimps

1 / 2 cup  of rice

3 eggs

1 cup of peeled shrimps

1 red onion

1 red bell pepper

bunch of dill

mayonnaise

lemon juice

Separately cook rice, eggs and shrimps. Add finely chopped egg, shrimps, pepper and chopped onion into the cooked rice. Mix mayonnaise with lemon juice and chopped dill. Flavor the salad.

Rice with chicken

1 / 2 cup of rice

100 g of mushrooms

200 grams of raw chicken

2 small tomatoes

a bunch of spring onions

2 tbsp. of soy sauce

50 g of butter

Boil rice in 1 cup of water. Cut the chicken filet, mushrooms and tomatoes. Melt the butter in a frying pan and fry the chicken and mushrooms until they become golden brown. Add cooked rice and tomatoes, stir. Fry for 5 minutes. Add soy sauce and hold on low heat for 2 minutes. Sprinkle the finished dish with chopped green onions.
