Pancakes based on mineral water

Pancake time has come! I have tried a lot of different recipes of pancakes, but recently I have caught an eye of a new recipe of pancakes. So I have decided to try. Thanks to the mineral water these pancakes are very tender and delicious.

Ingredients:

200 g of flour

300 ml of milk

300 ml of aerated mineral water (such as Borjomi)

3 pcs. of eggs

100 gr of butter

1 tablespoon of sugar

1 tsp of salt

Warm up milk and butter (butter has to be melt completely). Add mineral water, sifted flour, eggs, sugar and salt. Stir the dough until it becomes smooth and whisk with mixer. Leave the dough for 20 minutes and bake.

Pancakes are ready, so what filling can I invent for them? I have collected the recipes of delicious fillings, they are easy to prepare, so:

Banana filling

4 pcs. of bananas

50 gr of butter

2 tablespoons of sugar

Lemon

In a bowl mash bananas using a fork, add the softened butter, sugar, mix with grated zest and juice of one lemon. You can beat a puree using the blender.

Sour cream with prunes

350 g of sour cream

150 gr of prunes

30 grams (10 kernels) of walnuts

2 tablespoons of sugar

Chop the prunes and walnuts using a knife and mix with sour cream and sugar.

Oranges and hot chocolate

4 pcs. of oranges

A bar of chocolate

3 tbsp of cream

2 tbsp of nuts

Divide oranges into segments. Melt the chocolate bar. Add 3 tablespoons of low-fat cream to the chocolate. Add nuts (almonds, hazelnuts or cashews). Carefully lubricate each pancake with chocolate mixture, place 1 or 2orange segments, wrap the pancakes into tube or envelope. Sprinkle with powdered sugar before serving.

Mushrooms with sour cream

400 g of champignons

Onion

200 g of sour cream

2 tablespoons of vegetable oil

Salt, black pepper

Cut the mushrooms and onions. In vegetable oil fry onions and mushrooms, add salt and pepper, add the sour cream, stew for 2 minutes.

Herring

5 pcs of eggs

300 gr of herring fillet

Bunch of spring onions

Salt, black pepper

Cook hard-boiled eggs and chop them finely. Chop the onions. Add a little amount of salt (Caution! The herring is also salted). Mix all ingredients and add pepper. You can add ½ tablespoon of vegetable oil. Add 1 tablespoon of the filling for each pancake, make a “bag” from the pancakes and knot it with a spring onions.

Curd

500 gr of curd

200 gr of sour cream

Bulgarian red pepper

3 pcs of pickles

1 bunch of parsley

1 clove of garlic

Salt, black pepper

Beat the sour curds in a mixer. Cut peppers and cucumbers into small cubes. Chop the parsley and garlic clove finely. All mix well with sour cream and add salt and pepper. Put the filling on pancakes.
